Honey Coffee Cake
This honey cake is full of flavors, very moist, made with honey and coffee and it is a healthier alternative to the traditional honey coffee cake recipes. It uses honey crystals instead of sugar.
Nuts may be added for crunchiness and additional flavors.
Ingredients
- 3 eggs
- 1 1/4 cup Mama Healthy® Honey Crystals
- 1 cup honey
- 1/2 cup oil
- 3/4 cups of coffee (cold)
- 4 cups flour
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp baking soda
- 1/2 tsp ginger
- 1/2 tsp allspice
- 1/2 tsp nutmeg
- 1/2 cup mixed nuts (broken)
Directions
- Preheat oven to 350°F.
- Sift all of the dry ingredients together and set aside.
- Cream together the honey crystals and the eggs.
- Slowly add the canola oil, then add the honey.
- Continue beating until it is creamy.
- Add sifted dry ingredients and alternate with the coffee.
- Stir in the mixed nuts.
- Greased and floured baking pan (9 in x13 in).
- Bake at 350°F degrees for 1 hour.
